Sweet Potato Tagine

A North African inspired stew featuring, tender sweet potatoes & chick peas simmered in a flavourful blend of spices and aromatics.

Difficulty: Medium

Serves: 75 Primary or 50 Senior

Ingredients

Sweet Potato – 3kg
White Onions – 1kg
Carrots – 1.5kg
Vegetable Oil – 200ml
Tinned Chick Peas – 800g (2 tins)
Chopped Tomatoes – 2.5kg
Ras El Hanout Spice – 50g
Brown Sugar – 150g
Flat Parsley – 1 Bunch
Couscous – 2kg
Vegetable Stock – 3 litres
Lemon Juice – 150ml

Method

Method:

1. Peel and dice the sweet potatoes and carrots, then peel and dice the onions.

2. Gently heat the oil in a pan and sweat the onions, carrot and sweet potato for 5 minutes.Add the Ras el Hanout spice and cook for another 2 – 3 minutes, taking care not to burn.

3. Add the chopped tomatoes, drained chick peas, brown sugar and half of the vegetablestock. Simmer for 30 minutes

4. Add half of the chopped parsley and check the seasoning.

5. Put the couscous into a large bowl and pour the remaining veg stock over the top. Mix inthe rest of the chopped parsley and lemon juice and allow the couscous to absorb all ofthe liquid.

6. Serve a portion of the tagine over the couscous.
