Katsu curry

This mild, Japanese curry is loved by kids and provides the base sauce for adding chicken or vegetables.

Ingredients

  • Garlic – 4 cloves
  • Ginger – 4 pieces
  • Onions – 4
  • Coriander – 1 bunch
  • Korma Paste – 4tbs
  • Soy Sauce – 2tbs
  • Honey – 4tbs
  • Tomato Ketchup – 8tbs
  • Mango Chutney – 2tbs
  • Vegetable Stock – 1lt
  • Corn Flour – 3tbs
  • Olive Oil – 35ml

Method

  1. Peel and finely chop the garlic & ginger
  2. Wash, peel and dice the onion
  3. Heat the oil and fry the onion, ginger and garlic until soft
  4. Add the korma paste, honey, ketchup, mango chutney, soy sauce and vegetable stock to the pan
  5. Stir and simmer for 15 minutes then stir in the corn flour to thicken
  6. Top with fresh coriander to finish
  7. Serve with wholemeal rice and naan bread
