Katsu Curry

This mild, Japanese curry is loved by kids and provides the base sauce for adding chicken or vegetables.

Ingredients
- Garlic – 4 cloves
- Ginger – 4 pieces
- Onions – 4
- Coriander – 1 bunch
- Korma Paste – 4tbs
- Soy Sauce – 2tbs
- Honey – 4tbs
- Tomato Ketchup – 8tbs
- Mango Chutney – 2tbs
- Vegetable Stock – 1lt
- Corn Flour – 3tbs
- Olive Oil – 35ml
Method
- Peel and finely chop the garlic & ginger
- Wash, peel and dice the onion
- Heat the oil and fry the onion, ginger and garlic until soft
- Add the korma paste, honey, ketchup, mango chutney, soy sauce and vegetable stock to the pan
- Stir and simmer for 15 minutes then stir in the corn flour to thicken
- Top with fresh coriander to finish
- Serve with wholemeal rice and naan bread
